Our homemade scone recipe

What better than to enjoy on your Cornish Holiday, than a lovely cream tea?
Here's how we make our delicious Cornish Cream Teas
Ingredients and Equipment
You will need:
Large Baking tray
6cm round pastry cutter (can be 5 or 7cm if you prefer)
Large Mixing bowl
Sieve
Food mixer (optional)

450g Self Raising flour
125g Baking Margarine (e.g. Stork)
75g Caster sugar
Milk
Clotted cream
Jam
Method

Mix
Pre-heat the oven to 200c. Sieve the flour into the large bowl, add the baking margarine, caster sugar and mix well by hand. (You can use a mixer if you prefer)

Get messy
Now gradually add milk and mix until you get a firm dough, that is moist, but not too sticky.

Cut the scones
Flatten the dough out on a board to a depth of about 4cm. Using the pastry cutter, you should be able to make 9-11 scones, placing each one on the baking tray as you go.

Bake
Lightly dust the scones with flour and put in the oven for approx 12 minutes. To see if they are baked, you can put a knife in the top and there shouldn't be any dough on the knife when you pull it out. Be careful not to over cook them.

Eat
After cooling on a wire rack, add Jam and then clotted cream (The Cornish way) and Enjoy with a nice cup of tea.
